Watermelon Surprise

Refreshing Summer Fruit Salad!

Ingredients:

1 small watermelon, seedless is preferred
2 cantaloupes
1/2 pound cherries
1 pound peaches
seedless grapes
1 cup sherry
3 Tablespoons fresh mint
1 Tablespoon lemon balm

Instructions:

1.  Start in the morning by cutting the watermelon in half, length-wise, and removing the pulp with a melon baller or scoop.

2.  Place empty watermelon shell in the refrigerator to chill for later use.

3.  Make melon balls from the cantaloupe, too.

4.  Mix together the watermelon balls, cantaloupe balls, cherries, grapes and any other fruit you might like.

5.  Add the peaches last so they do not turn dark.  You can also dip them in lemon juice to prevent darkening.

6.  Add mint and lemon balm to the sherry and stir thoroughly.

7.  Place the mixed fruit into the sherry mixture and stir.

8.  Allow fruit to marinate all day in the sherry mixture in the refrigerator.

9.  Before serving, return the fruit to the chilled watermelon shell.

10.  Decorate with sprigs of mint dipped in egg whites and dusted with granulated sugar for a frosted look.
