Minted Iced Tea

Minted Iced Tea

Refreshment from the Summer Heat!

Ingredients:

6 to 8 sprigs of fresh mint, 12 inches long

4 cups water

Instructions:

1. Wash the mint.

2. Liquefy mint in the blender with the water.

3. Let sit for 30 minutes.

4. Strain.

5. Pour over ice, then sweeten to taste and enjoy.

6. To sweeten this tea, make a simple syrup by heating 1 cup of sugar in 2 cups water.  Stir to dissolve the sugar in the water and bring to just the boiling point.  Remove from heat, cool, and store in a recycled clean syrup bottle.

7. The tea and the simple syrup will both keep in the refrigerator for about two weeks.
