Persian Chicken with Herbs

Middle Eastern Take on an Old Standby!



Ingredients:


8 Tablespoons butter
2 medium onions, sliced
1 large chicken (cut into pieces)
2 cups chicken stock
salt and pepper
1 cup chopped dried parsley
1 cup chopped dried chives
1/4 cup chopped dried mint
1/4 cup chopped dried coriander leaves
1/3 cup walnuts, chopped
2/3 cups orange juice
grated rind of 2 oranges
2 eggs, beaten (optional)

Instructions:

1.  Melt 1 ounce of the butter in a large skillet and sauté the onions until golden.

2.  Add the chicken, chicken stock, and salt and pepper.

3.  Cover and simmer 1 hour until tender.

4.  Melt the remaining butter in a frying pan.

5.  Lightly cook the parsley, chives, mint and coriander to flavor the butter.

6.  Add to the chicken.

7.  Stir in the chopped walnuts, orange juice and orange rind.

8.  Simmer for 30 minutes.

9.  If desired, stir in the beaten eggs just before serving.

10.  Accompany with noodles or rice.
