Apple Mint Sorbet
Apple Mint Sorbet
Creamy Cold Goodness!
Ingredients:
7 large sprigs of apple mint
6 Tablespoons sugar
1 1/4 cups water
juice of 1 large lemon
1 egg white
mint sprigs for decoration
Instructions:
1. Wash mint and carefully pat it dry.
2. Place sugar and water in a large pan and boil until all the sugar has been absorbed.
3. Add the mint.
4. Cover the pan.
5. Remove from heat.
6. Let steep for 20 minutes.
7. Taste.
8. If you desire a stronger flavor, bring the liquid to a boil once more, cover, remove from heat, and let sit for another 10 minutes.
9. Strain the liquid into a bowl.
10. Add the lemon juice.
11. Let the liquid cool.
12. When cool, place in the freezer until semi-frozen (45 to 60 minutes).
13. Beat the egg white in a separate bowl until the white is stiff.
14. Gently fold the egg white into the semi-frozen mixture.
15. Return the sorbet to the freezer until it is frozen to a firm consistency (about 1 hour).
16. To serve, spoon into four champagne glasses.
17. Decorate each with a sprig of apple mint.
