Minted Cucumber Salad

Add some ZING to your cukes!

Ingredients:

4 cucumbers, peeled, halved, seeded and sliced
1 onion, sliced
1/2 cup chopped fresh mint
1/4 cup chopped fresh parsley
1 orange rind, grated
1/2 cup olive oil
1 cup red wine vinegar
1/4 cup granulated sugar

Instructions:

1.  Toss the cucumbers in a bowl with the mint, parsley, onion, and orange rind.

2.  Whisk the oil, vinegar and sugar together in a small bowl.

3.  Pour over the cucumber mixture.

4.  Cover and refrigerate for at least 4 hours.

5.  Toss again before serving on a very cold bed of lettuce.

6.  Serves 6 to 8.
