Minted Beets with Apricots
Fruity Side Dish Bliss!
Ingredients:
Young beets
Apricot jam
Mint sprigs
Butter
Frozen lemonade concentrate
Minced fresh mint leaves for garnish
Instructions:
1. Steam young beets until barely tender.
2. Skin and slice. If beets are tiny, leave whole.
3. Place in a casserole.
4. Dot with apricot jam.
5. Cover with a blanket of mint sprigs.
6. Dot with butter.
7. Pour frozen lemonade concentrate over all.
8. Cover casserole tightly.
9. Cook in a moderate oven (325 degrees) until tender (about 20 minutes).
10. Remove cooked herb before serving.
11. Garnish with a light sprinkling of minced fresh mint leaves.
