Lavender Drop Cookies

Simple, but oh so yummy!

Ingredients:
1/4 cup butter or margarine
1/2 cup sugar
1 egg
1 Tablespoon dried lavender buds, crushed fine.
1 cup flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon lemon zest
1 teaspoon finely chopped mint

Instructions:

1. Preheat oven to 375 degrees.

2. Cream together the butter or margarine and the sugar.

3. Add the egg and the lavender buds and mix well.

4. Sift together the flour, baking soda and salt.

5. Add the dry ingredients to the creamed mixture and mix well.

6. Fold in the lemon zest and mint.

7. Drop by teaspoonfuls onto an ungreased cookie sheet.

8. Bake in the preheated oven for about 10 minutes.

9. Watch carefully so cookies don't over-brown.


Lemon-Lavender Glaze

Ingredients:

4 tbsp fresh lemon juice
2 cups confectioners sugar
2 teaspoons lavender buds

Instructions:

1. Blend the juice and sugar together until smooth.

2. Dip the top of each cookie into the glaze.

3. Sprinkle a couple lavender buds onto each cookie.

4. Be sure not to overdo the lavender here; a little goes a long way.
