Angelica and Mint Sandwich

Delicious Light Luncheon!


Ingredients:


a good handful of fresh young angelica leaves
a good handful of fresh mint leaves
1 or 2 Tablespoons mayonnaise
2 to 4 slices of white, whole wheat or rye bread

Instructions:

1.  Pass the leaves through a food mill or chop very finely by hand.

2.  Mix the herbs together.

3.  Cut the crusts off the bread.

4.  Spread 2 slices of bread with mayonnaise.

5.  Sprinkle a thick layer of the herb mixture on top.

6.  Cover with another slice of bread or leave open-faced.

7.  Cut into quarters and serve.

8.  Serves 2.
