Mint Nut Bread 1
A New Twist for an Old Favorite
Ingredients:
2 1/2 cups flour
1 cup firmly packed brown sugar
3 1/2 teaspoons baking powder
3 Tablespoons oil
1 1/2 cups milk -OR- 3/4 cup apple juice and 3/4 cup milk
1 egg
1 cup chopped fresh mint -OR- a scant 1/3 cup dried chopped mint
1 cup chopped walnuts (optional)
Instructions:
1. Preheat the oven to 350 degrees.
2. Mix the flour, sugar, and baking powder in a small bowl and set aside.
3. Whisk together the oil, milk, and egg.
4. Blend together the dry and moist ingredients.
5. Add mint and walnuts.
6. Bake in greased bread pans in the preheated oven for 50 to 60 minutes.
7. Cool and slice.
8. Ages and freezes well.
