Iced Lavender-Mint Tea Punch

Divinely refreshing on a hot summer afternoon!

Ingredients:
6 teaspoons dried mint
6 cups water, boiling
1 Tablespoon dried lavender blossoms
1 Liter bottle ginger ale
1 cup purple grape juice
Ice cubes with a fresh mint leaf frozen in each
Mint Ice Cubes

Note:  If fresh herbs are available, use twice as many as you would of the dried.  In the summer, you may prefer to make Sun Tea, instead of boiling the water.  Add the lavender to the jar when you bring it in from the sun to cool.

Instructions:

1. Brew the mint in the water in a teapot for 10 minutes.

2. Add the lavender blossoms to the pot.

3. Allow tea to cool.

4. Strain the tea.

5. Add the ginger ale, grape juice and ice cubes.

6. If serving in a punch bowl, float lavender buds and mint sprigs on top.
