Mint Nut Bread 2

Ingredients:
2 cups unbleached flour
3/4 cup brown sugar
1 Tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 teaspoon nutmeg
1 cup nutmeats
fresh or dried mint, to flavor
1 egg, beaten
1 cup applesauce
1/4 cup salad oil
Instructions:
1. Preheat oven to 350 degrees.
2. Mix together the flour, sugar, baking powder, baking soda, salt, nutmeg, and nuts.
3. Combine the mint, egg, applesauce, and oil.
4. Add to dry ingredients.
5. Stir until blended.
6. Pour batter into two, greased loaf pans (8" x 4" x 2").
7. Bake in preheated oven for about 45 minutes.
8. Cool on a rack.
9. The bread will slice more easily and have a better flavor the day after it is baked. It also freezes well.
