Minted Pea Salad

Zippy Side Dish!

Ingredients:

Two 10-ounce packages frozen peas or equivalent amount of sugar snap peas
1/2 cup sour cream
6 green onions or scallions, sliced
Herb Salt, to taste (Click HERE for Recipe)
1/4 cup fresh mint, chopped (or 2 Tablespoons dried mint)
6 slices of cooked, drained, and crumbled bacon

Instructions:

1.  Thaw peas, if frozen, or steam gently, if fresh.

2.  Drain thoroughly.

3.  Combine with remaining ingredients.

4. Chill.

5. Garnish with fresh sprigs of mint.
