Rosemary-Pineapple Cooler

Looks Great--Tastes Better!

Ingredients:

1 cup pineapple juice from a 46-oz. can

1 teaspoon fresh rosemary

Handful of spearmint leaves

A pinch of salt

2 cups water

1/2 cup sugar

3/4 cup fresh lemon juice

6-oz can frozen limeade

Rest of the can of frozen pineapple juice

Pineapple wedges

Rosemary sprigs



Instructions:

1.  Simmer the 1 cup of pineapple juice with the rosemary and spearmint for 5 minutes.

2.  Strain.

3.  Add the salt, water, sugar, lemon juice, limeade, and the remainder of the pineapple juice.

4.  Stir together.

5.  Chill.

6.  Pour over pineapple wedges and garnish with rosemary sprigs. 

7.  Serve.

8.  Serves 25.
