Snow Peas a L'Herbe

Spicy mint Flavor!

Ingredients:

1/2 pound snow peas
2 1/2 Tablespoons peanut oil
1 teaspoon fresh tarragon
1 Tablespoon fresh spearmint
A pinch of cayenne pepper

Instructions:

1.  Wash, drain, and de-vein (remove the string, which makes them more tender) the snow peas.

2.  Mix together peas, herbs and pepper and set aside.

3.  Heat oil in pan over high heat.

4.  When hot, stir-fry the peas and herbs for approximately 1 minute or until you achieve the desired tenderness.

5.  Season and serve immediately.

6.  Serves 4.
