Lavender and Honey Roasted Chicken




Lavender and Honey Roasted Chicken

Delicately Flavored and oh so wonderful!

Ingredients:

1 Tablespoon thyme
1 Tablespoon rosemary
1 teaspoon lavender
1/2 cup honey
1 1/2 teaspoons marjoram
1 garlic clove, minced
1 shallot, minced
1/4 cup aged balsamic vinegar
1 whole roasting chicken

Instructions:

1. Combine all ingredients (except chicken) in non-metal bowl.

2. Preheat oven to 350 degrees.

3. Season whole chicken with salt and pepper.

4. Roast chicken for 30 minutes.

5. Baste with lavender-honey marinade every 5 minutes for an additional 30 minutes or until completely cooked.  Bird is done when meat thermometer inserted into thickest part of thigh registers 165 degrees.  Do not overcook.

6. Once bird has browned nicely, you can cover it with foil until finished cooking to keep skin and marinade from burning.

7. Once finished, brush additional marinade between flesh and skin.
